Irish Apple Cake

My LDS Stake Relief Society presidency just introduced a new program for us called Pursuit of Excellence.  This program consists of a number of goals we can choose to pursue this year.  One goal I chose was to try a new recipe once a month and another was to take a treat to someone periodically.  I decided to combine these goals with my love for Family History.

Yesterday I tried a new recipe--Irish Apple Cake.  I divided it into four parts--delivering one part to 3 different people and keeping one part for us to eat.  For those I delivered, I put the piece on what I call a "Family History Friendship Plate."  The idea is for the person to pass on the plate to someone else with a treat from his/her heritage.

RECIPE

INGREDIENTS:
3 cups of flour
3/4 c white sugar
1/2 teaspoon of salt
3 egg yolks
1 c butter, softened
1 lemon, zest grated
1 3/4 c applesauce
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground cloves

DIRECTIONS:
  1. Preheat oven to 350 degrees
  2. Grease a 9x9 inch baking pan
  3. Mix flour, sugar, and salt together in a bowl
  4. Beat in egg yolks, butter, and lemon zest until dough is thoroughly mixed
  5. Mix applesauce, cinnamon, and cloves together in a small bowl
  6. Press half the dough into the prepared baking pan; spread applesauce mixture over dough in a layer.  Top with remaining dough.
  7. Bake in the preheated oven until cake is browned, 40-45 minutes
